Two Potato and Beet Hash with Poached Eggs and [Kale].

The kale substitutes controversial frisée in the original recipe. I also prefer red potatoes to Yukon, so I used those. I’ve made this twice now, first with SK on Saturday, and then again today for S. It’s so very delicious. I can’t wait to do more egg poaching.
